So, what kind of help do you want from the forum ? Trade up for a heavy duty if you really can't live with it.
But, your fuel consumption sounds about right, especially if your truck is equipped with the 3.73 ratio differential (sorry, don't know what the "XLT Texas" edition is equipped with), trying to maintain 65mph through rolling hills.
Towing our ~4,700lb TT at about 60mph my '13 ecoboost (with 3.73 diff) gets about 10 to 11 mpg. Much worse when towing through mountains or into a severe headwind.
Relax, slow down and enjoy the journey

Blows my mind people actually expect any kind of fuel economy with a truck much less pulling a trailer.

Sounds about normal for most trucks I've had or ridden in. Not exactly sure what you are looking for. Fill the RV with helium balloons to lighten the load? Try Highway tread tires?

What vehicle did you use to tow the 5,000# before?
What towing mileage did you get with that vehicle?
Considering that when you hook up a 5,000# trailer to your truck, and you double the weight of the load on the engine, what kind of mileage were you expecting on this new vehicle?

I was really expecting / hoping for around the same or better...Oh well, thanx again.

I have to agree with most here that you must have had unrealistic expectations. When a truck is hooked to a 5k pound square box and drags it through hilly areas at 65mph, mpgs will drop. Best chance of getting more mpgs towing is to get a SD diesel, but it will get lower mpgs not towing. There is always a trade off. My 5.0 does get 11 or so towing my GN, at 70 but a GN with tapered nose presents much less wind resistance.
