I totally agree with you ... but I was looking at it strictly from the "legal" standpoint ... not whether or not they would catch you.
it would APPEAR that since you're not viewing any television or movie stuff (non-driving related stuff that would be considered a distraction), then the monitor is perfectly legal. Front view monitor or rear view monitor, those "views" are assisting you with driving, not necessarily distracting you.

There are plenty of unenforced laws in every state. Texting and driving, can't enforce it really but it's illegal. Driving 56 in a 55, its illegal but you won't get pulled over for it.
A case can be made much easier that this is a television type piece of equipment than it is not.
I have no beef in the matter. I'm from Illinois where I know this is illegal to have any screen on that a driver can see while operating his vehicle. As long as it is used as intended then I wouldn't see an issue, its people that drive while watching a movie that force them to create laws to punish the 98% of people
Looks to me like the meat of this law is the definition of "television-type receiving equipment". Find the definition of that, and then see if you can argue a good case that a rear-view backup camera is NOT "television-type" equipment, and you won't be breaking the law.

Back OT The circuit on the bottom of Rnlcomp's post labeled 93-1 with the blu/wh wire is probably hot (12V) when the truck is in reverse. And 0V when the truck is not in reverse. That tells the monitor to come on. With the wiring plugged in, check it. If that works, you'll need to splice a diode into it pointing to the mirror (stripe end toward mirror.) Probably a diode like this:

Then connect one side of your switch to 12V and the other to another diode (same specs) with its striped end connected to the other diode's stripped end.
The diodes prevent current backfeeds but allow the normal operation of the monitor.

I read the statue and I'm very well aware of all the Florida statutes but it does not relate to the issue we are talking about.
This is not an aftermarket 7 inch screen that you buy at Best Buy and only works when a vehicle is in park.
Sounds like you're a cop, if you are good for you and if you pull people over be prepared to see that person in traffic court.
