My best guess would be diet as what a cow eats transfers through into the taste of milk/beef. I think Ontario is a bit more grass/grazing based whereas Alberta is more grain based. Vast majority of beef cattle are raised on grass, it's the finishing that defines the flavor (grain finished vs grass finished). Usually depends on what a person grows up with as to what they think is better.

This is true. I grew up on Ontario milk. But I also grew up on Ontario beef, yet prefer Alberta beef better. Meh, I suppose I am just turning into a fussy old man! Lol!
