Stat housing wont come off
On my 1986 I decided to change the thermostat because I pulled the top rad hose in hopes of changing out the antifreeze and lo and behold there isn't one on my truck. Now I got to put a new one in but I can't take the bolts completely out of the housing cause they are so long they run into the water pump..... Is this normal or does my truck seem to be a special case (insert grumbling about previous owners)

I had that problem with my a/c compressor bracket the bolts were Hittin the pully on the water pump so I just went ahead and bought a new water pump gasket and took it off checked it cleaned it and put it back on after takin my bracket out you might try just takin off your pump and changin the thermostat
