I'd just put a heavy coat of spray paint. Just to get thru the winter then sand and prep and try POR15 . Or you could just put some used oil in a spray bottle and go to town. Then run 'er down a dusty road. That'll get ya thru for awhile

I definitely wouldn't sand and prep and then just leave it alone for 5 months. Between pressure washer, engine degreaser, and sanding, any film you put on now would come off without too much trouble in a few months.

Thanks for the replies the truck will not be driven this winter it will sit in the garage getting ready for the resto project.

Update: power washed the under carriage and will now start the dismantling stage. Final picture of her all together
