If it's the catalytic converter it should start again once it has let back pressure out of the exhaust correct? So after I get off it would probably start for another short time before same issue?

Had this very same thing happen with a family members truck, they put the air filter in backwards and it was blocking air flow, those cone style filters can be inserted backwards but obviously shouldn't be. Make sure the plastic bullet on the end of the air filter is pointing away from the engine.
