The 'saddle bags' are definitely useful for storing stuff like straps, hitches, etc...
A rear power window that would roll down completely would be sweet. If you have the short bed, it would make it easy to carry a few pieces of 2x4 or similar when you have to.
One feature I love in my Avalanche is the auto-tilt mirrors. They tilt down when in reverse so you can see how close you are to the curb when parking. The turn signals in the mirrors are nice, too. Overall, the Chevy mirrors are better than the standard F150 mirrors, IMO. I think I want the tow mirrors on my F150.
The extra battery tray in the engine compartment was useful, too. Makes it easy to add a second battery for aux stuff, though newer LED lights don't have the same draw and it may not be needed unless you're running a winch or something.
The cut-outs in the bed to lay a 2x4 across to stack cargo are also neat. I mounted some Thule fork mounts on a 2x4 to make a bike carrier for the bed.
As for the roof rack, I have one on my current truck, but never used it. I don't think I would want a permanent one, since I think it affects aerodynamics / mileage. Probably just get a set of Thule / Yakima racks to use if/when needed. Hopefully, my skis will fit diagonally in the bed, though.
