Default 3.15 axle question

I pretty much found a sweet deal on a 2013 eco-boost with only 6000 miles on it. The only thing that bothers me is the 3.15 axle ratio. After reading several topics about how everybody loves the 3.73 ratio I'm wondering how sweet of a deal this truck really is for me.
I do plan on towing a trailer with roughly 1800 pounds a couple of times a month.. Other than that it's just going to be a truck to get around town in and go to the beach with.

Should I go ahead and seal the deal on this truck based on my usage or should I wait for something else to come along?

Also how will the gas mileage be with this particular gear ratio set up?

If you plan to tow something heavier in the future I wouldn't go for it. But if that's all you're doing you shouldn't have any problems. If you drive a lot of highway the 3.15 is going to help with your mpg significantly compared to the 3.73. Right now I'm running a 3.55 on a 5.0 with 80% highway and I can get up to 20-21mpg on trips.

What would be the maximum I can tow with that particular gear ratio before I noticed any significant difference?

It really matters on the exact setup. You can find a chart most likely on the website where you can look up the exact package. For example if it a reg cab or super crew, What size box it has, the wheel base. All of these play factors in the end.
