Post-Renovation Appraisal Value?

Post-Renovation Appraisal Value?
I'd like to protect my investment that I have in my truck and since it's an 88, by insurance standards its not worth much. However, my insurance agent said with an appraisal I can get more coverage for it.
I've got about $12k into the restoration so far. I figured it's worth about $7500 or so. What would you guys think is a reasonable value post renovation? Just trying to go into this appraisal with reasonable expectations so I know if his value is reasonable or not. (I know how subjective reasonable is, and how variable "classic" car values can be)

I don't know what I did differently, but I just did an online quote for both providers, using 10k as the value. Hagerty was $650/year and Grundy was $170.

Just my 2 cents but have used Grundy for my restored vehicles for 10 years and a buddy that had a claim with them and they were good on his claim. Only have my 63 Fairlane wagon left but use them.
