A 32x11.50 will be pretty snug -that's what I had on my 1993 4x4 with 2" raised coils. When I added a 4" rancho later in life, I'd rub the radius arm near full lock.... enough that I couldn't turn tight enough for a parking space.
Best is probably a 31x10.5.

You haven't asked all the right questions.
A 17" or 18" is irrelevant -you just adjust to make the tire diameter what you are after. I mean you'll be limited to a 31", for example, regardless if you find a 14" rim or a 20" rim.
Asking about a -12 offset applies to only one wheel width, so you'll have to figure out what width wheel you want.
Pretty sure this is what I had and it lists a -19 offset. You're close, just have to figure out what wheel width you want to adjust accordingly.

You can find a wheel calculator to see what offset works with the width you are after. I wouldn't get a wheel much wider than 8" for the width of tire you probably need. Check your tire manufacturer web site for a recommended width to fit your tire. Obviously the larger wheel diameter you get will allow a wider width for the same diameter tire too. Meaning an 18" wheel with a 32" tire may be okay on a 9" wide wheel/rim. You'll have to check that with your tire manufacturer.
