Clutch chatter has been an issue for years, the rice wagons with their 8" clutches and no vehicle weight have made us all envious. If clutch material is known to still be good suggest a more rapid engagement. Deffinately don't buy a gippo brand clutch.

it has never chatter like this it always hits three times when it does and this is the second clutch replacement in the past few months i thought flywheel might be an issue is this possible?

Did they resurface your flywheel when you had the clutch replaced? I kinda doubt that'd cause your problem. I've got a 89 351 with a 4 speed and it chatters....always has, always will. New flywheel and clutch when I did the motor. How many miles are on it? Do you have someone thats not real good at driving a clutch running the truck at all? If so the clutch plate could be getting warped.
